I was inspired this summer, after a visit with our dear friends, to make my own granola. My friend had introduced me to a product Healing Home Foods, where it’s mostly raw and some “baked” products…Check it out if you want to take your foods to another level. After almost devouring her Granola, I had to try and make my own. It is gluten-free and has a low glycemic index. My kids have been eating it by the handfuls, as well as my husband who can’t get enough of it sprinkled on top of his plain greek yogurt in the morning!
This such an easy way to make a healthy, low-fat, gluten-free Oatmeal filled with taste! I’m giving you the basics here, but feel free to add what you want and love!
Add the Oatmeal, hand chopped Almonds (better for bigger crunchy bits), Craisins, Coconut sugar (low glycemic!), ground flax seeds and salt.
Next, add your coconut oil, almond butter, and maple syrup (this can be modified for sweetness) in a pot over low to medium heat.
Pour over the oatmeal mixture…
Add vanilla and stir together until well combined. Spread into a flat pan with sides (aka. jelly roll pan) that has been sprayed with Pam/Canola oil. DO NOT FORGET THIS! Like I did my first time…;) it was not a pretty pan to clean afterwards.
Bake at 250 (yes low & slow heat for this one) for 45 min.
Make sure its nice and crispy on the sides. Let cool for 10 min. and with a spatula , start placing chunks into a plastic container to hold your granola. Keep in pantry or fridge, whichever you prefer. Add to yogurt or as a breakfast cereal, or a healthy snack!
Almond Craisin Crunch Granola
Preheat Oven to 250° F.
4 cups Gluten-free rolled oats (I prefer Bob’s Red Mill brand)
1 C. Craisins
1 C. hand-chopped Almonds
1/2 C. Coconut sugar
1/2 tsp. Salt
1/4 C. Flax seeds
Mix all these dry ingredients together in a bowl.
In a 3-5 Qt. pot, over low-medium heat add:
3/4 C. Coconut Oil
1/2 C. Maple Syrup Grade B
3 TBS. Almond butter
Once these have been liquified, not boiling tho! Add to dry ingredients. Then add:
1 TBS. pure Vanilla extract
Mix thoroughly. Spread onto pan sprayed with Canola Oil spray and place in heated oven for 45 min.
Remove from oven and let cool for 10 minutes. Place in designated container or plastic bag. Eat as desired and often ~Enjoy!
