Grandma’s Crispy Fried Chicken Circa 2012

I remember eating my Grandma’s fried chicken as a kid…we would wait for Sunday dinner and it would take all day.  The Crisco was out, the deep fryer was cooking away and it seemed like it took hours for her to finish, but it was well worth every last crunchy fried goodness that you licked off your fingers (you know what I mean! It was that good!).  The crispy pieces crunched at first and then were melted fried heaven in your mouth. Mmmm, I literally can still taste it.  I also had the metabolism of a jack rabbit then, so it didn’t matter what I ate.  Fast-forward to 2012, a little older (haha) and a little wiser to the effects of trans-fats on the body.  But I digress, I was searching for a way to mold the two worlds and I think I found something that has all the juiciness of a good fried chicken with as much health as you can possibly get with the word “fried” in it. Remember these??


I have seriously collected thousands of recipes over my many years.  Age Alert: I know I’m divulging my age, but I used to clip out recipes of the Wednesday newspaper (what’s that you say??)  when I was a kid! YIKES! So when I actually saw the “Card Catalog”  at Nordstroms I had to take a quick pic because I just started cracking up! Those of you who know what this is will appreciate it.  My children have no idea why I’m laughing right now ;).  This gave me an idea to take some of those old recipes and start to remake them and adjust them accordingly, if needed.  As I start this blog, I hope that I will give you inspiration and a love of food that I guess I inherited from my Grandmothers (on both sides) and family.  As I travel, I will post pictures that inspire as well and will hopefully reignite my photography abilities I once had as a college student.

As the weather begins to get a little chillier, my need for warmth in my food increases.  Also, mornings that my husband drives the kids to school means I have longer than 10 minutes for breakfast!  This particular morning, I was craving some greens with my eggs so instead of my normal egg whites & spinach scramble I thought I would take it up a few clicks.  Here’s a quick specialty brunch for a crowd or as you can see for one.

Quick Gluten Free Spaghetti & Organic Meatballs

So as you’ll come to see, I love the old comfort foods of my childhood. But with a 21st century twist, i.e. I am more conscientious as to what goes into my mouth. With that, I discover ways to improve the dishes I like. My son was begging for spaghetti and meatballs for the last 2 weeks so I figured it was time to honor the request now that the weather turned a little cooler.  As part of my gluten-free attempt in my household I sneakily pull out the old pasta box with the new gluten free version in an attempt to trick the mind that it tastes exactly the same!

Hello world!

This blog was really born out of a love I have for food.  All kinds really!  I have experimented with practically everything out there: asian, comfort foods, sweet, savory, raw, vegan, gluten-free (is my latest one to play with).  I try to implement my nutritional knowledge into my meals everyday.  I choose mostly organic (when it’s available), but if it’s not visually appealing I will pick conventional foods.  I buy local, in-season foods and cook accordingly. I’ve been known to cook according to my mood (i.e. PMS brownie’s).  I am a mother of 3 beautiful children and the wife of my best friend!  I am an acupuncturist by trade, so I take seriously the seasons, the time of year, when I will cook a specific food. I hope to inspire you to take the time to make your own foods.  I will put my quick spin, when I can, on certain meals and will also suggest accompaniments when it fits.  About Pics
